I am super excited to share this product with all of you because it is a product that I have thoroughly used and have had a wonderful experience with. My regular readers know I am a foodie at heart and huge fan of kitchen gadgets, especially those that A) help me make amazing food and B) make my life simpler. This chicken wing and leg rack does just that.
The product comes with two pieces, a rack for holding your poultry and a pan that sits below it that helps contain the drippings and scraps from the meat as it cooks. The drip pan is extremely useful as these juices can be utilized in either basting or for making high-flavor gravies and sauces. The drip pan is extra-deep to accommodate even high-fat poultry and has sturdy weight bearing handles on either side to make moving the tray easy. One of the features of this product that really made it a keeper for me is its versatility. Both parts of the unit (rack and drip pan) are constructed of a really high quality stainless steel and are dishwasher friendly!! Additionally, if you are not planning on using the drippings for sauces or gravy - you can use the drip pan to steam or grill veggies right below your chicken. Add a little water and butter to the bottom, fill with veggies and seasonings and allow the juices from the meat to marinate and add amazing flavor to your vegetables! Whether you are making a handful of chicken legs for Monday night dinner or are grilling a slew of food for a birthday BBQ - this rack is definitely a must have for any family. The products super durable, stainless steel design allows it to be used in the grill, smoker or even in the oven. The only ounce of issue I had with the product was cleaning up the drip pan, especially after grilling - but *pro-tip- cover your drip pan with aluminum foil if you are not planning on using the drippings or for easy removal of steamed veggies. The layer of aluminum foil allows food to cook evenly but removes easily - taking the mess with it. I really cannot say enough about this product. It’s not often I am so enthusiastic about the products I try - but this one is so useful and has a lot of great features. It also is a big help in preparing tastier, healthier food. Your chicken is crispy and flavorful without sitting and cooking in huge amounts of fat. This product also decreases cooking time by evenly spacing the meat so it cooks on all sides at once. This chicken wing and leg rack is definitely one I recommend and hope that others will enjoy it as much as I have. Food Dehydrating is a fun and versatile skill that no food enthusiast should lack. Whether you are making homemade meat jerkies, drying herbs for cooking or dehydrating fruits for tasty snacks -- this method of preserving food is simple and the possibilities are truly endless. Here are a few tips and tricks to get your started on your journey. Choose the Right Dehydrator! While some people may choose to go 1960’s hippie compound and open-air dehydrate.. It’s must faster if you don’t. As you search stores and online sources for your electronic dehydrator keep in mind that there will be an overwhelming number of choices. Here are a few things to keep in mind when choosing. -Make sure the unit you pick has a temperature setting! Different types of plants, fruits and meats dry at different rates and dry optimally at varying temperatures! A lot of units do not have a temperature setting and dry everything with moving air- but these machines are much harder to time and it is much harder to get the result you are looking for. -Multiple trays are your friend. If you plan to dehydrate snacks and herbs in bulk, having multiple drying racks in the same unit is key. Even if you are only doing smaller batches - having empty racks in between the ones you are using can help the food to dry more evenly by allowing for better air flow. Start off Simple! Like any other skill - dehydrating is a learned process - so it’s best to start off with easy projects and work your way up. Gourmet seasoned turkey jerky is likely not going to be a winner on your first go with a dehydrator. Here are some simple foods to try that tend to come out well -- even for beginners.
Don’t Rush! Before you begin dehydrating you want to do a bit of research on your intended project. Find out what the most commonly used temperature and time frames are for the plant, fruit or meat you are using. It is a common mistake to increase the suggested temperature in an effort to shorten the time it takes to dry the food thoroughly. Unfortunately - what ends up happening is that the outside of the food dries first and creates a seal over the item that often prevents the food from drying out completely. The main appeal to dehydrating food is that it preserves them and they stay edible for long periods of time. Trying to speed through leaves moisture inside that will cause the food to rot long before it should. If done right, dehydrated foods can help you stockpile non-perishables, tasty meat treats, fresh spices and tasty snacks for the whole family. Once you learn the basics, there’s no end to what you can create! The Sweet Taste of Summer! Summertime is filled with sunshine, outside picnics and family fun. When I first looked at the menu for this week's White Picket Produce box, my mind started swirling with the possibilities as soon as I saw fennel. In my opinion, fennel is underrated, under-praised and under-utilized in cooking. Fennel has a cabbage like texture with a sweet, licorice flavor that tends to take the lead in many recipes, but when given the opportunity to shine, I can almost guarantee it will become one of your favorite summertime vegetables. I saw the Valencia oranges, the pears, the tomatoes, and the cucumber; I was ready to start cooking and my box hasn't even been delivered yet! Cucumber, Tomato and Fennel Summer Salad
Let's start with a classic summertime salad combination of cucumber and tomato, paired with fennel. This recipe is probably the simplest one with the most flavor. Slice up the tomatoes into a medium dice, the cucumber into slices, and the fennel into medium strips. Toss them in a bowl and whip up this easy vinegarette. Ingredients 1 1/2 tablespoons of lemon juice 1 tablespoon olive oil 1 tablespoon fresh oregano salt and pepper to taste Combine all ingredients and mix in with the vegetables for a refreshing summer salad! Super Summer Soup Another fantastic recipe takes the cake for a fresh summer soup, perfect for an afternoon lunch. With a bubbly white wine, this dish has the undertones of luxury that lifts the flavors of the fennel to royal status. Ingredients 1 1/2 bulbs of fresh fennel, sliced. 1 medium onion, sliced 2 medium pears, diced 1 bay leaf 1 1/2 tablespoons of olive oil or butter 1/2 cup white wine 2 1/2 cups water Salt and pepper to taste Directions 1. Heat the olive oil or butter in your dutch oven or a large pot and once the oil is hot, add the fennel and onions. Sprinkle with salt and pepper and allow it to cook down for about 10 minutes until the onions are translucent and just starting to caramelize. 2. Add in the pears and finish cooking the mixture. 3. Deglaze the pan with the white wine and then add in the water and the bay leaf. Cover the pot and allow it to come up to a boil before reducing the heat and simmering on a low heat mostly covered (just allow some of the steam out) for about 5-10 minutes. 4. Remove the bay leaf before blending the soup with an immersion blender. If you need to use a free standing blender, let the soup cool down before blending to avoid splatter. Then enjoy! I prefer to serve this soup with a nice piece of crusty bread, or it's even delicious with some shaved parmesan cheese! Citrus Fennel Salad One of my favorite summertime dinners is grilling a great piece of chicken or fish with either a slice of lemon or orange on top.. This citrus inspired salad pairs perfectly with that! Slice up your fennel as thinly as you can, then peel and slice your orange. I learned that if you slice the top and bottom portion of your orange and then slice the peel off in horizontal sections, it's super east to slice up the orange into little wedges perfect for a salad! To make the dressing for this salad, combine 2 tablespoons of olive oil with a tablespoon of either orange or lemon juice with salt and pepper. Drizzle the dressing over the top and garnish with a bit of chopped flat leaf parsley, and you're ready to serve! I hope you enjoy some of my favorite fennel recipes. The ice cube trays are perfect for freezing homemade baby food, or add some fruit to regular water to make infused ice cubes to add some extra nutrition to your drinking water!
